...about to go on holiday to a place where fresh oysters might be available...would like some tips on what you consider the best way to prepare them, etc...

I never had oysters but folks do like them raw. Just don't swallow any wayward pearls. LOL!!

Just make sure they are fresh and I personally would avoid ANY raw food, specially oysters.

I like all three, but prefer raw. I'm a huge seafood fan, but within the last 7-8 years have become allergic to many types of seafood.

I really like raw oysters. But I can only eat the little ones. The big ones that take a couple of bites are nasty feeling.

If you can get little ones like kumamotos, or Miyagis's, excellent.

They are really plentiful where i live.

I like them with Mignonet, which is white wine vinegar and chopped up shallots. Or a couple of shakes of Tabasco.

Raw- with a squeeze of lemon juice. As far as cooked-Oysters Kilpatrick- YUM. Always thought that is was just Bacon and Worcestershire sauce, but I saw a restaurant menu where they add- BOURBON !

Oysters Rockefeller;

On the half shell, with parsley, butter and Parmesan, broiled.

BBQ with my own secret sauce.

Love oysters any way, raw best.

Old saying, 'twas indeed a brave man that ate the first oyster. They really are a bit ugly, but taste great.

NW USA recipe, "Angels on Horseback."

Place oysters on grill, in shell. As soon as they open, take off top shell.

Take oyster out of remaining shell, wrap with bacon and secure with toothpick, return to shell.

Back on the grill until bacon is cooked. To finish, a little squeeze of lemon juice and a dab of real butter, when butter is melted dine away.

As good as it gets. No idea where the horseback part comes from.

Love them any style but prefer raw with the vinegrette recipe GMorrison suggested.

Remember, though, they should only be eaten in months with an "R" in them unless they are commercially farmed. They're regulated well in the U.S. so no worries there.

I'm biased!  As a retired Executive Chef/Executive Sushi Chef I definately recommend 100% raw oysters only if they are extremely fresh.  They should smell of the salt water ocean!

A little lemon juice and cocktail sauce goes a long way.  My humble opinion is that your question for how to eat oysters are all valid.  Try a little of everything just to get a great pallet of flavors.
