This is an educated guess, but I'd say it's a Morane-Saulnier MS.230:

It was a parasol design, two-seat trainer.  I remember it from "The Blue Max".  An MS.230 was used for the experimental fighter that Stachel takes up and crashes.  The front cockpit was faired over for the film.

Pietenpol Aircamper; minus the engine cowl, and a little artistic license.

"Why do I do this? Because the money's good, the scenery changes and they let me use explosives, okay?"

I was thinking Pietenpol as well.  There are many custom Pietenpol with different engines and cowlings.

Here is my 1:24 scale Pietenpol, using a Model A engine from a 1:24 car kit.
