As Rick said paint is a personal preference and most people end up using what is most readily available in the local hobby store (LHS) . I use enamels because I like the coverage, the finish and the adhesion. The air pressure I use ranges from about 18 psi (normally thinned paint) to about 12 psi for fine work (heavily thinned paint).
Do yourself a favor and pick up some cheap kits and experiment away, oh and have fun too.

Welcome to the FSM Forums Sign - Welcome [#welcome]. You could post your question on the painting & airbrush Forum, but I'll give you a quick reply. Acrylics vs. Enamels is a personal choice. I prefer enamels because of their better coverage & adhesion. Many prefer acrylics because they are less toxic & a little easier to clean up, but you risk adhesion problems. Thinning ratios depends on the paint, the AB & the compressoer settings you want to use. With a normal medium tip AB & pressure in the 20 psi range, most paints don't require more than a 3:1 paint to thinner ratio & many can be used from the bottle with no thinning. If you want to do finer work at lower pressure, you may need to thin more. No hard & fast rules, experimenting with your AB set up to find what works best for you is mandatory.

I recently retired and began modeling again after a 30 year gap. I have been mostly into WWII aircraft and have just bought an airbrush and set up a workshop in the garage.
I am amazed at the sophistcation the hobby has acheived over the years. I used to spend my time looking for info ,now one can spend time sigting through the volumes that exist.
I could use some comments on whether to use water or oil base paints and the ratio of thinning for airbush use
