Regularly. Helps to have years of experience when doing the more complicated kits as well as some working knowledge about the subject you are building.

The most recent one was a Eduard P-39, I got it as a bag kit, no decals no instructions or clear parts either. Still awaiting the glass pieces but otherwise ready for paint and decals.

Still amazes me when I get requests for copies of instructions for kits with fewer pieces than the word instruction has in it. Especially those old kits from Hawk that even have raised details to where the decals go. But thats just me.

I did a Tamiya Pz II a few years ago. I'd lost the sheet and built i in an afternoon. In the serious figure world, that's the norm. Some have even had tiny pieces I had to carefully study the box art on-line to figure out. Most don't even have a painting guide or might have a guide in the languiage of the country where it was produced.

Haven't yet, but I will.  I picked up Monogram's P-41B and Hawker Typhoon kits in 1/48, from an eBay auction.  They're bagged, with no instructions or decals.

I built the Mustang when I was a kid, and it's a relatively simple kit, in terms of the parts.  I built a Typhoon, but it was Revell's 1/32 version.

As was noted above, it helps to have some knowledge of the subject.  But I keep hearing in my head a line from Tim Allen's standup routine from years ago, "...and when I was done, I had a whole bag of real important lookin' stuff left over..."

Uh, I just built a 1/9 scale ED-209 from "Robocop"  No instructions, but it does have only 20 parts......

built a 1/8th scale pocher ferrari without instructions i did however look at a picture on the web of the motor to see where the distrubuter caps mounted(odd place on the ends of the heads) but other than that just the box art(pix of finished model)the working suspention and hinged lids and doors were a trick. and yea i had left over parts.

we're modelers it's what we do

Gerrys comments are my own. Ill take any kit and have many that are without instructions, decals etc.

Most of the time its no big deal, Ive done this since I was 11. If there is a problem I cant handle, there are always these...

After building several of them, I usually build Wildcats without instructions.
