Thinking about trying these out for a few projects (Pz.III lights, P-47N underwing lights). Are they worth it? 

Also, on the P-47N, the instructions call for installing the clear parts of the lights before joining the wing and painting (groan...). I'm thinking with the MVs,  I could put some sheet styrene inside the wing, then just inset the lenses where the clear parts would have gone. Plausible?

MV lenses are great, I've used them a few times on armor stuff.  Relatively inexpensive upgrade I think.  I think your idea with inserting afterwards makes sense, that's what I did with the armor headlights.
