That's a pretty broad question. Might narrow it down to Armor, Aircraft, Auto, etc. Personally, the kits I've been yearning for the most are the 1/48 Vindicators, long promised by Accurate Miniatures.

I'd like to see a 1/35 WWII Comet and updated (accurate) 1/35 kits for all the U.S. WWII halftrack variants.

as far as kits on the market go,
AFV club's 251's and their new Tiger late, The tristart Pz I and IV, Tamiya Stug III ausf G, and from dragon, all of their 251's and their tiger, and from trumpeter, I like all of their new WWII era kits.
thats a brief list of what I "want"

Kits that are not yet being made
Horch German ambulance
sdkfz 251/20
sdkfz 251/1 ausf A (dragon and AVF club are making them)

I would really like to see a re-release of the Italeri Sherman M4A3 w/Calliope.
Or perhaps an A.M Calliope kit.
I heard that Verlinden had a A.M kit out of the Calliope but thats ancient history now.

I'm looking forward to someday getting the Polar Lights USS Enterprise Refit in 1/350 scale. It's big, it's beautiful and been a long time coming...

I would like to see these kits in plastic:
New T-62
2s19
2s3
Comet
BTR-90
T-90
As for best kits, I am going with the Tamiya T-55 and the DML initial Tiger I.

Have you got the rest of today and tomorrow for my "wish list"? I'll give you the abbreviated list.
1/48 Beech 2000 Starship
1/48 Beech King Air Super 200
1/48 Beech BeechJet
1/48 Beech Bonanza 33/35/36
1/48 Cessna 120/140
1/48 Cessna 170/180
1/48 Cessna T210
1/48 Cessna 208 Caravan
1/48 Cessna 500 Citation
1/48 Mooney M20J

In 1/72 I would like too see some US cargo planes and trainers that are sorely needed to fill a lot of gaps in my collection. How about a C-131 or C-133? Or how about a T-33 or T-39. My list of whats needed is in the thousands. Most of them are of planes that most people have never heard of yet were important in the way they were used. (Care Flight comes to mind here).

Well Dragon is coming out with an overdue 88mm and Tiger I which I've been waiting for, but I would love to see a Valentine or BT-7 by Dragon or Tamiya.

Yes, the time is right for a reissue of the Italeri Calliope, but it did get bad reviews because of the simplification of the mounting struts. The Verlinden one was way too heavy (solid resin) for the supports.

I'd like to see new tooled M3 Lee/Grants (yes, I hear they are coming) along with new tooled US half-tracks.

I wouldn't mind having some better kits of the Mig 23 and 27in 1/48th. I have the old AMT/Ertl 27 and just won an old 23 off of ebay. Just wish hasegawa would do a newer version. I guess for right now I will have to be please with what I got.

I'm waiting for the Trumpeter release of the SAM-6 tank, and the MAZ Soviet tank transporter. Also, the announced Bronco Models Scub on IS2 chasis is on that list as well.

I'd love a Piaggio P.180 Avanti in 1/72 or 1/48. thats just about the most beautiful civil aircraft currently going.

I'd also like an Aero 45 or 145 in 1/48. I scored an Amodel 1/72 Aero 145 a while back, but I'd love one in 1/48 as well.
