Does anyone know any easy ways to make canopies for aircraft.

If you have the original then just vacuform it.

If you don't have the original, hmmmmmm?

Get the specs and reference and do one clear panel at a time.

Without an original? Easy is way out of the question.  The least difficult way would be to carve a wooden buck out of balsa or sculpt one out of air dry clay and then vac-form over that.  Nice thing about this method is that the balsa is inexpensive and the clay can be reshaped (as long as it doesn't dry out).  It'll give you the opportunity to tweak and readjust the shape and details before making a pull.  And a buck will allow you to make multiple vac-forms in case you mess up a few times.
