The thing to do is a Google search for a particular subject and scale - for example, Bell UH-1 1/72 - and read the kit reviews and build notes that the search generates and make a decision based on them. It's difficult to recommend one company that consistently produces good kits that build into accurate models; they all have good ones and mediocre ones.

Can you narrow it down a bit?  There are hundreds of kits across all the scales.  All companies have good and bad kits as well.  Do you have a prefered type, country, era/war, timeframe, or scale?

Since you didn't mention a preferred scale or type...civil/military, attack/utility, etc....I'll just throw in with two favorites, the 1/72 Sea Kings by Airfix and Revell. Both offer good level of detail and lots of options for markings in both 'plain wrapper' and 'special' schemes. [And lots of aftermarket decals available as well, if you're so-inclined.]

The Revell Mk41 is a particular favorite, having built a bunch of them over the years...last one as an Exocet-armed bird from the Qatar Emiri AF. [I think that build thread is still here on the forum, but the photos disappeared in the Photobucket fiasco a few years back and I never bothered to repost them.]
