I was wondering who makes a good aftermarket Huey instrument panel, over head console panel & center panel for the ESCI/AMT UH-1D, plus the armoured seats for the pilots, and are they sold by Great Models & Squadron?

Cobra Company makes a UH-1N update set in 1/48 scale that includes all the parts you are talking about. Instrument panel would need to be changed to work with a D model, but wouldn't be too difficult. http://www.cobracompany.com

Check out Eduard's set, Cuda.
It doesn't have the overhead console but, it does have the IP, plus lots of other goodies.
You can also view the instruction sheets for the set.
