Fokker DR1, Fokker DVII, S.E.5a, Sopwith Camel. I built Eduards 1/48 scale Airco DH-2 last year, which was my first attempt at a bi-plane. Trust me to choos one that had the most rigging on it! It was a great test of patience, but the rigging really sets it off;

I have no experience with rigging.  I'll start with an airplane with minimal rigging :-)

Eduard seems to dominate the 1/48 WWI aircraft market.  I have Eduard kits their quality is superb. 

Minimal rigging = D-VII  Dragon makes a nice one (or 1/72 Revell)

Neuport 17 = Eduard

SE-5 = WNW

Dont forget the Fokker E-3 also from WNW or if your brave 1/72 Revell

The 1/72 Revell kits make fine starting points if you can add cockpit detail, and Airfix has a bunch as well with some of the same issues.  

BE AWARE!!!! Once you build some of these icons, you will be irreversibly addicted with no hope of recovery but to build an entire airforce of single double and triple winged beauties.

D-VII, Camel, Spad if you must choose.
