The plane which is associated with the Fallschirmjager is the Junkers Ju-52. An excellent 1/48 kit is the Revell-Monogram, and in 1/72, the Italeri kit is widely available. You will have to look around to find paratrooper figures in these two scales, though. If you are just doing a partial aircraft, like for a diorama with 54mm or 1/35 figures, you could scratchbuild it with Evergreen corrugated sheet.
