I recently purchased a book "Color Mixing Recipes" that is a fantastic resource of color combinations for skin color using oils and acrylics. It also covers hair, eyes, and lips.
As an introduction It has a very concise section on color theory.
It was written for artists (as in canvas) but is very useful for those of us that paint figures.
Also, it was only $10!!!
