I am new to sci fi modeling and I have the Polar Lights Enterprise and I remember in the past seeing a fiber optic lighting kit for it.  Does such a kit exist today and if so where can I find one?

Also, is there any advice on how to proceed with this kit especially with the aztech decals?

Trekmodeler.com has a lighting kit using LED, not fiber optic. I've seen some very good results with it from other builders. I bought it, and never finished the model {other reasons} but the lighting was quite easy to work with.

Or just google 'enerprise 350 lighting kit' and you'll get other sources of kits, too.

I wish you luck with the 1/350 Enterprise, it's a monster of a kit and really has to be lighted to do it justice. I have followed an online build of kit, see below link

Some excellent WIP pictures and tips from this guy.

Have you seen the photo etch parts available for this kit? Well worth the buy if you can locate them as they give you better defined hanger bay frame work, impulse engine grills, airlock hatches, navigational deflector ring and many other little worth while additions.

I also purchased the compete decal set from Starship modeller's main site...an amazing piece of work are these decals, should save some time and effort on the paint job, that was the main reason I didn't build this kit ages ago..

I have one 1/350 Eenterprise NCC-1701 still in the box.  I built the 1/350 Enterprise NX-01- too big to display and I will probably never build the NCC-1701.  Lighting it up is a real project that I don't care to undertake.
