AMT/Ertl had a Tie Interceptor out that still may be in some stores. The model is a snap-tite, but if you break off the pins and do a little accurizing, it'll look good.
I though there was an Interceptor from SMT Models but it turned out to be a Tie Avenger - still a good looking model at

The easiest way to get a good looking Interceptor is to also acquire AMT's TIE Fighters kit. This was one of the last kits the company produced in the Star Wars line, and one of the best. It is the same scale as their TIE Interceptor, and the TIE Fighters kit includes two fighters. You can attach the solar panels from the Interceptor kit to one of the cockpit modules from the TIE Fighters kit and get much better results. The newer kit has much better detail on the cockpit "ball."
