                        I made a 1/200 IXC from Nichimo.  I don't know if they still make it or not but it's worth a look.  Decent kit, not of the highest standards but still respectable.

                        Flagman Models has one announced in their catalog that will be available in plastic (Kit # 235010) if you can wait; if not Yankee Modelworks has one in resin you can go for as well if you prefer that medium.

                        Hello,  my Great Uncle served aboard U-514, and I wanted to build an IXC as a tribute to him,  does anyone know who makes one ?
