A challenge? You have a gift for understatement.
COMBAT MODELS produces two WWI era German U-boats (U-9 and U-35), and a USN "S-Calss" Sub designed at the end of WWI.As well as an old "flush deck" USN Destroyer (U.S.S. Ward).
Be prepared to invest a lot of time, effort and resources.Scratch-building skills are a must,as well as raiding after-market detail sets.A good looking finished product can be accomplished, but it will take a lot of patience.
I'm currently working on the 1/72 "S-Class" (WWII version). My early WIP photos can be viewed at....
