The White ensign set is a good start, also check out google i remember a builder built a 1996 verison of the nimitz that might be a good place to start, I think the key in this whole project is to get it to look enough like your friend ship but not a carbon copy.  Good luck, I have that project on my to-do list but I want to build her in mid 80's to 90's when I work with her during my time in the navy.

White Ensign Models makes a PE set to update the '75 Nimitz to later configurations

WEM 1/350 USS Nimitz Refit Parts(Reference #PE 3568)
Contains all additional parts for post 1975 refits of all ships in the class, including bridge nameplates . ADDITIONAL PARTS ONLY - Does not include all the parts for the out of the box fit.

You may also need to get the basic PE for the Nimitz as this is a supplemental set to complete the build.    Ask John @ WEM for particulars

The Flight deck was also redone as well with the removal of the 4 protrusions from the front of the flight deck.

I'm not sure what exactly needs to be done to update it, but, Gold Medal Models produces a photoetched update set which should help.  It is the "Nimitz Extra Details" set.  Hope this helps.
