I've got this kit in my stash.  It does indeed represent her as she looked in (I think) the twenties - with the 8" gun turrets and a box full of lovely biplanes molded in clear plastic.  It has the potential to be made into a beautiful representation of the spit-and-polish era of naval aviation - especially with the help of a set of photo-etched parts from Gold Medal Models.

Squadron has it on sale now.  What configuration (year?) is it?  Does it have the big guns on it?

I had bought the Lexington in 1:350, which is in WW2 configuration.   Felt sad when they came out with the 350th Sara, which is early version, but those big kits are too much money to build another. If the 1:700 kit is the early version, I can build that!

The box art shows her in SNG #5 with the ID stripe on the funnel.   Leads one to assume that it is the interwar version with the 8-inch guns.    The Saratoga had her 8-inch guns removed during her yard period following her torpedoing in January, 1942.  They were replaced with 5"/38s which were more effective dual purpose guns.   The 8-inchers had no anti-air capability.
