My first sailing ship was the Revell 1/96 USS Constitution (I bought it in 1966 for $9.99!) I don't recall having any difficulties with her. After that, I built the Cutty Sark, USS Kearsarge, and the CSS Alabama in the same scales before attempting my first wooden kit (Model Shipways Mayflower). Several years ago, I saw photos of the Mamoli HMS Victory built by a 72 year old woman; it was not only her first sailing ship model, it was also her first plank-on-bulkhead model! It looked terrific!
My advice is to build the ship that interests you. You are more likely to finish her, and you will develop the necessary skills to do so.
