I just picked up the old R/M 1/800 kit of this one for a bud and I to do for a friend's wife (he passed away this spring) He was an F4 crew chief on her around 71-72. What was she painted in at that time frame. Also are there any glaring deficiencies in the kit that are easy fixes for an average modeler? Can build OOB and she probably won't pick any of them up.

The ship was painted Haze Gray. In full scale, that is Federal Standard #26270, marketed as Neutral Gray by Modelmaster. I suggest that for such a small model that color looks too dark and you would do better with Modelmaster Dark Ghost Gray.
The masts and radar antennas and the very top of the stack was black.
Flight deck was very dark, and it weathered quickly. Do not paint it black. Modelmaster Engine Gray is a very very dark shade that is good for a flight deck.

Model ships are the one genre I think scale effect (change of color and shade by atmospheric effects) are important. I have seen modelers lighten 1:48 and 1:32 aircraft for such scale effect. If it were that foggy that those aircraft had their colors altered by the atmosphere, the details would be softened, too, but no one advocates that.
But the scale viewing distance of a 1:350 or especially a 1:700 ship may be a quarter or half mile at least, and over those distances you definitely see the effect.

The problem with that kit of the Kitty Hawk is that she actually represents the John F. Kennedy, which had a different funnel configuration and leading angle of the flight deck overhang. The Arii, Otaki, Academy, & Ki-Tech have a more appropriate model of the Kitty Hawk in that same scale. I have quite a few extra, and would be happy to send you one if you would like. No charge.

Got it worked out with Bill, thanks to him for raiding the stash. Will do a WIP on her when I get started on it. Think I will shelve the Gato for a bit to get it done, should go fairly quickly, and my bud can get the honor plate engraved and the plexi cover done once I figure out the mount base size.
After looking over both hulls, I think I'll do some major surgury on them by combining the lower (waterline down) from the Revell and waterline up from the kit I got from Bill. That kit was a motorized version, and the Revell bottom looks way better. At least I'm getting a start on her.

Just ran across another kit of her, wondering how the (IIRC Academy) 1/800 fares in the accuracy dept.?

It is virtually the same kit as the Otaki/Arii/KiTech, etc.
