i am at the stage of installing the kit included channels but i have purchesed aftermarket dead eyes. Do i cut off the plastic Dead eyes and drill holes and replace with aftermarket dead eyes? any hot tips would be apreciated.

Having set up to make the effort to install accurate deadlines lanyards and shrouds; you should make them. 

What is your plan for the chains themselves? The lower deadeyes are best installed with a loop of wire.

Also, Whether plastic kit parts or your own, I suggest pinning them to the hull.

i was looking at this for the Chains https://modelexpo-online.com/Chainplate_c_111.html  but i am guessing on 5mm or 7mm  i also bought some chain from Michales

i was thinking of cutting off all plastic gluing on styrine to thicken the kit channel i saw in earlier replies you made to  Force9 or Arnie i forget who stating to to pin the channels to the hull

I made all my own stuff, including the channels.

Definitely pin them to the hull.

While called "'chain plates' they are not actually chain.

The lower deadeye is held in a loop that's pinched into a lopsdied figure of eight shape.  The upper half the diameter of the deadeye groove.  The narrow "neck" of the figure eight goes through the cannel.

An iron loop passes through the bottom eye.  This loop is often a sort of egg-shape, if distended.  Another loop is made up through the first and its end is bolted to the hull (or to a third link bolted to the hull). 

Since these are loops and not a single bit of bar stock, they are referred to as "chain links."

Actual linked chain did see some use, but only after such chain became commercially available  Shipbuilders tended to stay with the old pattern, though, as it was known and proven.

From memory, Constitution's lower eyes are 16" diameter, whic his going to be a hair larger than 1/8", about 4mm to scale.  Some of the eurokits use 7mm so that they can use upper 5mm deadeyes.

I have made my own blocks and deadeyes, but it was a laborious process.  For a full rigged ship I would either use the kit's rigging hardware or buying the deadeyes especially from third part vendors.  The kit's blocks are not bad, especialy after spraying them with Testors Dullcoat and redrilling the hole(s).
