I  suggest you get a copy of  U.S.S. Enterprise in Detail and Scale by Bert Kinsey. Although it does not contain a blueprint of the hangar deck, it does have many photograghs of it including the murals on the fire doors.

You could check for The USS Kittyhawk or USS America since they're of the same class. And, non-Nuclear. HTH

I was going to recommend the Floating Drydock to you, but a check of their site proved that they don't have what you are seeking

I know that it may be hard to believe, since the Enterprise has been around since the mid-60sm, but many parts of her design are, and continue to be classified.    Iron Shipwright has been seeking the hull lines of many of the nuclear cruisers for many years.  They have submitted Freedom of Information Act requests which have been denied as nuclear secrets.  I'm sure that much of the information you are seeking are similarly classified.  

Of course, if you have the clearance and can prove need to know ...
