Every manufacturer has its high and low points...I strongly recommend visiting Rajendra's List of ship kits to get the lowdown on each. It's located in the links section of Modelwarships.com.
Personally, as far as ship kits are concerned, Tamiya builds the best of the bunch you've listed. Hasegawa is pretty good in the 1/700 range, and the Nichimo kits are simple yet easy to build.
