Your best bet in 1:700 scale is to probably just concentrate on the crane & boom rigging and the signal halyards. Anything else, mast stays, long radio antennas, etc. would probably lead to confusion.
Your best reference for a Fulton-class would probably be photos from a source such as navsource.org and the photo archives at the Naval Historical Center (history.navy.mil).
There may be some rudimentary rigging info contained in some of the plans abailable through the Floating Drydock (floatingdrydock.com). Unfortunately, these auxilliary ships are not as well documented as are combattants.
