Sometime I get the Model Master flat black due to the larger size bottle. If I air brush the MM flat black more than a couple coats it seems to get progressively glossier. Am I seeing things? Is the Testors flat black different from MM? I don't seem to have this issue with the Testors flat black.

It would not surprise me. In my experience, in the past few years, MM paints seem to have some quality control issues, especially regarding flats losing that quality, or paints simply going bad and un usable as they sit.

Add a couple of drops of lighter fluid to the mix and problem solved.
The flatness/sheen of black paints varies with the application. Flat paint can go semi-gloss with thicker coats, gloss paint goes semi-matt with a dry, thin coat. If you build up flats with several coats they will tend to have more sheen as it is harder to put down a dry coat.

Dunno, I bought some Testors flat black and hit my project with it and it laid down nice and smooth and flat. I'm still suspicious of the MM flat black.

Has the paint been thoroughly stirred before thinning for airbrushing? Stir well, do not shake.

Not if you learn to stir the paint first rather than shaking the paint bottle.
Maybe, but I generally use the same methods pretty consistently. Although possibly the larger bottle tempted me to shake it. I have some MM left. I'll be sure to stir and maybe squrt some on a test piece.
Slap some Dullcote on that baby and call it good.
