I paint them flesh colored.  If you try to do the whites and the pupils, you get a "deer in the headlights" look.  Maybe I would add a tiny black dot in the middle, but that's all.

Am painting 1/35 Bofors Commonwealth crew pieces. I am debating painting the eyes but they are quite small. Any techniques from you guys please or should I not bother and leave flesh coloured? Thanks
