Depends on whether it is a military plane or a civil one.  Most military planes are matt, most civil ones are gloss.  But there are exceptions in either case.  Part of good building is research, which will flag the exceptions.  For instance the planes for military aerobatic teams, and some military transports have gloss finish.  Matt finished civil planes are quite rare but I have seen them.

I've done a lot of armor and a few ships and I always finish those with Testor's dullcote.  Dead flat seems the right finish for those.

Is it the same for plane models?

If not, dead flat, what do you like for a final finish coat?  And product pointers are welcome as well. 

I use DullCote on my aircraft, too.  I build mostly WW II USN subjects.  Even the Gloss Sea Blue finish dulled in the Pacific environment.

As Tojo noted, if you're building jets from the 50s or 60s, with hi-visibility finish, or commercial jets, then an absolute dead-flat finish is probably not what you'd shoot for.  Though, jets in service do show variations in finish, through a cycle of use, wear, and maintenance.

I would say the same thing for racers, and for between-the-wars US yellow wings subjects.  Those aircraft tend or tended to be well-maintained.

The bigger the government, the smaller the citizen.

Flat is fine,unless you are talking about hi-viz jet schemes from 50's-70's they were glossy
