.. airbrushing, I have to remove my needle and clean it, or else it sticks?
After Im done painting, i shoot lacquer thinner through it for about one minute. But If I remove the needle, theirs still paint on the needle? Im using the Iwata CS Eclipse.
and I turn my pressure up to like 50 when im cleaning it that way.

do you backflush when cleaning? that could help... also some needle lube goes a LONG way to keeping the needle clean... rub some over the front 50% of the needle and stick it in and you should't have to clean it till you are done spraying for the day...

Tom is correct on the needle lube. Makes a big difference in cleaning, as well as helping with normal painting. Don't fire up the AB without it.
