I mostly airbrush.  Not only do you get a much smoother finish, but you put on a thinner, more uniform coat of paint, so less surface detail is obscured.  About the only time I don't airbrush is for tiny detail painting, or the occasional situation where perhaps masking is difficult or impossible, and/or brush marks won't really show.

Typically, I airbrush as much as possible, especially if there are visible 'flat' surfaces that may show brush strokes. This includes cockpit surfaces, strut bays and doors, tanks, bombs etc. I don't use rattle cans anymore. Airbrushes tend to make them obsolete. I'll hand paint the rest of small parts. Airbrushing as much as you can makes for a better quality build.
