Old model mags used to have 3-views of a subject in each issue. Many of those old drawings have been collected and published as books. Many by Paul Matt.
The most recent books I have are great compilations. They are a two volume work, titleed Paul Matt Scale Airplane Drawings, published by White Canyon Books.
I just checked Amazon. They still list the books. There are between three and four dozen sets of drawings in each volume.
Also, if you do a Google Image search, include the word drawings in your search terms.

do you have any insight on where to find scale blueprint style drawings of aircraft? I remember a video by Paul Budzik on where to find them, but have been unable to find it again, so I figured I would put out an APB to the fellow builders on here. Any info would be helpful. Thanks

Yup, image searches often turn up models or video game images of any given subject. It kind of ticks me off that search engines have no way of discerning between photos of a real item and models or gaming images... Ah well...
When I am ready to build a model, I usually do a google image search on the subject. One problem I frequently have is finding that many of the images there are actually models, and I question the authenticity of models, so I like to sort out only the real planes/cars/ships, etc.
There are such great builds and such good photography that it is getting hard. I was looking for photos of a flying boat recently, and found pictures of what seemed like a big aircraft floating on the water. Further photos showed it was a large scale RC! I guess the only way I can tell any more is seeing lots of people standing around, or when it is in a museum with other aircraft where perspective can give it away.
