There's a series of large format paperback books published by Boxtree (I think) that details stuff from the Star wars, including one on vehicles; each vehicle 'history' is given, and accompanied by various scale drawings and illustrations.

A few years ago there was a series of magazines called something like 'Star wars Technical Journals' that had lots of equipment pics and info. I have one at home and can get you more info maybe tomorrow.
Also try your local Barnes and Noble sci-fi section. There have been at least a couple of big books with 3/4 and cutaway drawings of ships and such. These might be the same one djmodels was talking about.

The Technical Journal is also available in book format, also from Boxtre Ltd (ISBN 075220887X)

The series I was refering to is called Star Wars: The Essential Guide to... (a handful of titles).
