Back in the late 90s, this one NASA Research Facility crash-tested an AH-1S with crew restraint systems. It was painted a dull-yellow color, with the rotors removed, and instruments removed. Is there a 1/48 AH-1S? Would this be a good project to work on?

Monogram made/makes one in 1/48. There are quite a few available on eBay.
As far as a good project to work on, sure why not. It sounds interesting.

Actually, the Monongram kit is an AH-1F, sometimes called an AH-1S (FMC). If the NASA bird was an AH-1S (Mod) with a rounded canopy, there are no kits in 1/48. Special Hobby just released a 1/72 AH-1S kit.
This is an AH-1S (Mod):
I thought Fujimi had a 1/48 scale with the Mod canopy some years back?

Ti4019 I thought Fujimi had a 1/48 scale with the Mod canopy some years back?
Not to my knowledge. The released a Prod (AH-1P) and a FMC (AH-1F) with the flat plate canopy though.

Hi Ray, Testots/Fujimi had a 1/48th AH-1J with a rounded canopy. Also I think Floyd Werner has them also. Gary
