I can recommend you almost every tamiya kit in 1/48th scale! They are very easy to build, have an almost perfect fit and are very detailed!

Glad to have you in here. Teaching world history to 7th graders would definetely get them into interests in the World Wars. For me 7th grade is when I really started getting into the war machines. WWII aircraft in particular. The machines is where alot of the initial interests are and then the story behind them fills in alot of gaps and is interesting in itself. Welcome to the forums.
As far as 1/72nd scale aircraft I'm at a loss on giving you any good advice but I will say that if space isn't an issue that you can build alot of the old Monogram/ Revell kits fairly quick in 1/48th scale. There are lots of choices there and they are easy builds.

There are even two Tamiya kits of it. A Razorback and a Bubbletop. If it's Tamiya, it can't be bad, eh?

Too many choices, but you could always start with the "basics": Mustang, Spitfire, Zero, Bf109.... Tamiya kits are generally always a sweet build; some of the new-tool Airfix kits look good as well.

Thats an awesome idea! I would like to see some pictures of your builds as well! A little tip here: Join some group builds! They are a lot of fun and the best place to learn! But don't overdo it like me! I already signed myself in for about 10 GBs (more than 1 project in most cases) and I am hosting 1 of them as well (hopefully a second one in the next days)
