David Damek at Plasmo models is probably the greatest modeler you can witness. Watch for entertainment value not sure any modeler can duplicate his results. Doogs models has a ton of useful videos. My favorite is Will Pattison. The dude has made me a better modeler. I've watched 100's of hours of videos and Doog and Will are the best.

Flory Models is one I like very much. He's in the UK.
Great review videos as well.
Personally I really like Scale Model Workshop by Paul Budzik. IMHO he kind of sets the bar for quality of Youtube video production for hobby stuff.

This channel on YouTube has taught me a lot, especially in the area of eliminating seams before they even exist in the first place...even on parts that don't necessarily fit together all that well.

I will typically search youtube for whatever subject I am looking to build, or paint, or technique. I have subscribed to a couple, but for the most part, I search and watch as needed. I do like 'Black Magic Crafts' for inspiration, although his thing is more about table top fanstasy gaming, he has some awesome techniques and ideas that I have adapted.
Ian E is a good one for figure painting, as is Hero Forge (another miniatures gaming site).
Luke Towan is a great one for terrain making techniques.
I will second Plasmo, and add Dr. Faust's Painting Clinic
I have a love/hate relationship with both Doogs and Will Pattison's channels...both are very knowledgable masters, but something about them kinda rubs me the wrong way...so I watch, then get annoyed, turn them off, and then come back again when I need to get ideas for something! lol
