Sculpey clay...

Here's a few pics of a 1/35 war torn European cottage diorama I started but never finished; walls were made from Sculpey, and the wood beams were made from popsicle sticks...

A thin piece of wood, covered in a thin layer of plaster or drywall compound.  It looks pretty realistic.  If adding battle damage--just use a motor tool (like a Dremel) and just nick it against the dried plaster where you want the bullet or fragment damage.
