I always thought X-Wings LOOKED to be a dirty, weathered white.
When building SF stuff from films, TV, or other visual media, I consider what is shown on screen to be the "references," absolutely no different than footage or photos of any aircraft, ship, tank, or automobile. As has been mentioned elsewhere, studio models often look very different "live" than they do on screen, due to the necessities of filming.
Having said that, real vehicles often look very different on film, too.
And as MM said in his FIRST comment, it's an imaginary craft, so there really is no correct color (or wrong color either, eh?).
