I prefer the gel to the runny stuff just because I tend to not glue my fingers together so much, seriously. But it sets slowly.
For gel I use stuff called zap-a-gap, or more recently Locktite makes a good one in a neat little bottle that has these kind of squeeze pads on the side. The advantage there is that if you point the end downwards, the whole bottle doesn't run out.
For thin stuff I use anything. I actually like the little tiny tubes that come in multipacks. The stuff dries up anyways, so why have a big bottle go hard.
Like any glue, it's better to squirt it out on something like a piece of tape and apply with a toothpick, rather than aim it at the model.
Those are just my preferences though.
