If you check back in some earlier post, that had been discussed. Basically, if someone had particular concerns about racial, religious, ethnic, or other practical concerns, they reported that to me. Otherwise- it's up to the Santa to pick, which really makes it a surprise for the recipient.
Unless I passed along specific notes for your recipient, it's up to you.
What we'd figured was it's not much of a surprise if you know what you'll get. Plus- I think it'll be neat for the giver to really put some thought into why a particular kit is special or fun, etc.
It's all about the giving!
